Recipe of the week

Chicken Tandoori

True tandoori is cooked in a clay oven, but I didn't have one of those! I don't have the recipe in front of me, but here's the gist. Very very good. This comes from a cookbook that my sister gave me a couple years ago (off my Amazon.com wish list), A Spoonful of Ginger.

6 0r 7 chicken legs/thighs, cut slits for marinade to penetrate! (I would recommend taking the skin off)
2 TB fresh minced ginger
2 TB fresh minced garlic
1 1/2 tsp cumin
1 tsp tumeric
1 tsp oregano
1 TB crushed red pepper
salt and pepper to taste
1 1/2 cups plain yogurt

Mix the yogurt and spices together and slather over chicken, let marinate over night. Bake @ 450 for 45 - 60 mins, until done and golden.

Recipe of the week

From allrecipes.com, I cooked it in the oven for 2 hours @ 350 rather than use the grill.
Very very yum!

Beer Butt Chicken


INGREDIENTS:
1 cup butter
2 tablespoons garlic salt
2 tablespoons paprika
salt and pepper to taste
1 (12 fluid ounce) can beer
1 (4 pound) whole chicken

DIRECTIONS:
Preheat an outdoor grill for low heat.
In a small skillet, melt 1/2 cup butter. Mix in 1 tablespoon garlic salt, 1 tablespoon paprika, salt, and pepper.
Discard 1/2 the beer, leaving the remainder in the can. Add remaining butter, garlic salt, paprika, and desired amount of salt and pepper to beer can. Place can on a disposable baking sheet. Set chicken on can, inserting can into the cavity of the chicken. Baste chicken with the melted, seasoned butter.
Place baking sheet with beer and chicken on the prepared grill. Cook over low heat for about 3 hours, or until internal temperature of chicken reaches 180 degrees F (80 degrees C).

One year! I rock!!

We bought our time-share in 2000, and haven't been back to Mexico since 2001. We are LONG overdue for some R & R poolside. This is a shot of the pool, and the photo below is a shot from one of the rooms. We usually go to the Cancun/Mayan Riviera (East Coast) side. Puerto Vallarta is on the West Coast of Mexico - I have never been in the Pacific Ocean!! We leave on March 22!!  Posted by Picasa

Recipe of the week

This was incredibly easy to make and very yummy. Use chopsticks to make it even more 'authentic'.

Spicy Garlic and Pepper Shrimp
(found on allrecipes.com)


INGREDIENTS:
2 1/2 tablespoons vegetable oil
1/4 cup water
1 cup shredded cabbage
1 tablespoon minced garlic
8 large fresh shrimp, peeled and deveined
2 teaspoons crushed red pepper flakes
2 tablespoons sliced onion
1 tablespoon chopped fresh cilantro
1 tablespoon soy sauce
DIRECTIONS:
Heat 1 tablespoon oil in a skillet over high heat. Add cabbage and 1 tablespoon water stir-fry for 30 seconds. Remove cabbage from skillet and place on a serving platter.
Heat the remaining 1 1/2 tablespoons oil in the skillet over high heat. Place the garlic and shrimp in the skillet and stir until garlic is lightly browned and shrimp turns pink. Add pepper, onion, cilantro, soy sauce and remaining water to the skillet. Stir-fry for 10 seconds. Pour the hot mixture onto the cabbage.
